Over 80 years ago, my Grandfather, Constantinos Balsas-Tsounis, was the only educated professional Chef in Greece. He was a master of the French, Italian and German Cuisines. Even the King would commission Grandfather Constantinos to cook for the special guests and Royalty that visited the palace. Grandfather Constanti Balsa died in 1942. Father of 13 children and husband to Maria Tzaki (My Grandmother, from Fragata Kefallonia. I later found out that most of the Tzaki Clan was executed by The Germans during the last war, 53 out of 80 Tzaki Family members were executed in Fragata.

I often helped my Grandmother with kitchen preparations for my Aunt Vassiliki’s lavish dinner and brunch parties. The menu’s were a work of art, wide and varied. The guests would not eat all day(even if they were filthy rich),so they can attack, as much as they can fit in their stomach......
My Grandmother Marigo (was abducted by my Grandfather, she was so beautiful, he could not afford to loose her), my Grandmother Marigo, Aunt Vasso and of course my beloved Father George taught me what is needed in the art of fine cooking. The legacy, of the Balsa clan.
Uncle Angelo ( my sweetheart, lives with his Family in Montreal, Canada) is from my Mother's side, he worked at high-class hotels, observed what the chefs would create in the kitchen and taught us, what he picked up, recipes well worth mentioning.
This book is devoted to all my ancestors and Family in their memory, to their health and to create a record of our special recipes and cooking secrets for all or more to enjoy...
The recipes are named in honor of the creator or muse of each.

When we Greeks cook we do put a lot of love in the preparations. We cook with passion.

Enjoy a celebration of flavors and good food, in the traditional and authentic Greek style/spirit, with love from Greece, a tradition since ancient times, for all of us, to enjoy life in full, starting from our palettes!!!
